Description

BBQ Shrimp Bowls are a delightful mix of juicy shrimp and fresh veggies, perfect for a quick dinner. With simple ingredients and irresistible flavor, this dish is ideal for anyone craving a healthy and satisfying meal.


Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp parsley
  • ½ tsp salt
  • ¼ tsp thyme
  • ¼ tsp oregano
  • ¼ tsp cayenne, optional
  • ½ cup bbq sauce, divided
  • 2 mini cucumbers, sliced
  • 1 cup shredded carrots
  • 1 avocado, sliced or diced
  • 2 cups white rice, cooked or sub brown rice or quinoa

Instructions

  1. Cook the rice according to package instructions if not done already.
  2. In a large bowl, add the shrimp. In a small bowl, mix paprika, garlic powder, onion powder, parsley, salt, thyme, oregano, and optional cayenne. Sprinkle this mixture over the shrimp and mix well.
  3. Heat olive oil in a skillet over medium heat, then add the shrimp. Cook until they turn pink, about 4 minutes. Remove from heat, add BBQ sauce, and stir to combine.
  4. To serve, divide the rice into 2 bowls. Place half the shrimp in each bowl. Top with cucumbers, carrots, and avocado.
  5. Drizzle with extra BBQ sauce and enjoy!

Notes

Make sure to peel and devein the shrimp before cooking for the best flavor.
You can substitute white rice with brown rice or quinoa for a healthier option.
