Description

This Beef Burrito is packed with irresistible flavor and simple ingredients like ground beef, black beans, and cheese. Perfect for a quick and satisfying dinner!


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat the oil in a large skillet over medium-high heat and swirl to coat the pan.
  2. Add the ground beef and press it out into a ½-inch thickness. Sizzle for 3 to 4 minutes until a crust forms.
  3. Sprinkle the spices over the beef and add the diced onion. Break up the meat with a spoon and cook until it is fully cooked through, about 4 more minutes.
  4. Stir in the black beans and salsa, cooking for about 1 minute until warmed through, and adjust seasoning to taste.
  5. To assemble: place a tortilla on your work surface, add cheese down the center, top with a sixth of the beef mixture, and sprinkle more cheese on top.
  6. Fold the sides of the tortilla towards the center and roll it up tightly. Repeat for the remaining tortillas.
  7. Warm a nonstick skillet over medium heat and brown each burrito on both sides for 1 to 2 minutes. Serve hot with toppings.

Notes

You can customize your burrito with additional toppings like guacamole or pico de gallo.
Feel free to swap the cheese for your favorite variety to suit your taste.
Store any leftover filling in the refrigerator for up to 3 days.
