  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 & 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 3/4 cup chopped cadbury mini eggs

Instructions

  1. Preheat your oven to 325F and line baking sheets with parchment paper.
  2. Melt the butter in a medium saucepan over medium heat. Stir occasionally until golden brown and fragrant, then remove from heat to cool.
  3. Whisk the brown sugar and granulated sugar into the browned butter until combined. Then, add the egg and vanilla extract, whisking until smooth.
  4. In another bowl, mix the flour, baking soda, and salt together. Gradually add this to the butter mixture, stirring until just combined.
  5. Fold in the mini chocolate chips and chopped Cadbury mini eggs.
  6. Drop rounded balls of dough onto the lined baking sheets using a large cookie scoop or spoon.
  7. Bake for 13 minutes, or until the edges set and the centers remain soft.
  8. Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Ensure the butter is cooled before mixing with sugars for a smoother batter.
Don’t overmix the dough after adding flour; this keeps the cookies soft.
