- 1 cup whole wheat flour, or sub all purpose
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1 tbsp honey
- 3 tbsp plain yogurt
- 1 cup almond milk, or milk of choice
- 2 tbsp chia seeds
- 2 tbsp plain yogurt
- 1 tsp lemon zest
- 1/4 cup blueberries
Instructions
- Whisk eggs, honey, yogurt, and milk together in a bowl.
- Add flour, baking soda, and chia seeds to the same bowl and whisk until well combined.
- Let the pancake batter sit for 10 minutes to allow the chia seeds to soak.
- Heat a nonstick griddle or skillet over medium-low heat.
- Use a 1/4 cup measuring cup to scoop the batter onto the griddle or skillet.
- Wait for the batter to bubble (about 1-2 minutes), then flip the pancake using a spatula.
- Cook both sides until golden brown and repeat until all batter is used.
- For the topping, stir lemon zest into yogurt, then add it on top of the pancakes with blueberries.
Notes
Feel free to substitute the whole wheat flour with all-purpose flour if desired.
You can adjust the sweetness by adding more honey based on your taste preference.
