Description

Experience the irresistible flavor of Chicken Marbella! This dish offers a delightful blend of olives, prunes, and aromatic herbs, making it a simple yet mouthwatering choice for any dinner.

Ingredients

Scale
  • 4 cloves garlic
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1 cup red wine vinegar
  • 1 cup olive oil
  • 1/2 cup brown sugar
  • 1 cup green olives (pitted or non-pitted)
  • 1/2 cup pitted prunes
  • 1 tbsp capers
  • Salt (to taste)
  • 8 chicken thighs
  • 1 cup white wine
  • Chopped parsley (for garnish)

Instructions

  1. Peel and chop the garlic cloves. You may use a mini food processor for easier chopping.
  2. In a large glass or ceramic bowl, combine the chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  3. Add the green olives, prunes, capers, and a pinch of salt to the mixture, then add the chicken thighs.
  4. Mix thoroughly to coat the chicken well in the marinade. Cover with plastic wrap and refrigerate overnight or for at least 3 hours.
  5. Preheat your oven to 180C/350F and arrange the chicken in a large baking pan with the marinade and other ingredients. If needed, use two smaller pans to avoid overcrowding.
  6. Pour the white wine around the chicken, avoiding the chicken skin to maintain crispiness during cooking.
  7. Roast in the preheated oven for 50 minutes to 1 hour, ensuring the chicken is fully cooked with golden skins. The internal temperature should reach 74C/165F.
  8. Garnish with chopped parsley before serving.

Notes

Marinating the chicken overnight enhances the flavor considerably.
Ensure chicken thighs are evenly spaced to avoid steaming instead of roasting.
