Chili Lime Roasted Cauliflower boasts an irresistible flavor with its perfect balance of spice and zest. This quick and healthy recipe is made with fresh cauliflower, chipotle powder, and lime juice, making it an excellent side dish or snack for any occasion.

- 1 large head cauliflower, cut into florets
- 2 garlic cloves, minced
- 2.5 tbsp extra virgin olive oil
- 1.5 tsp chipotle powder (more or less for spiciness!)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice (1 medium to large lime)
- 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)
Instructions
- Preheat oven to 200°C/390°F.
- In a large bowl, combine cauliflower florets with olive oil and minced garlic, mixing well to ensure even coating.
- Sprinkle chipotle powder, salt, and black pepper over the cauliflower. Toss to coat thoroughly.
- Spread the coated cauliflower on a baking tray and bake for 25 minutes, tossing once halfway through, until edges are caramelized and cauliflower is tender.
- Once removed from the oven, drizzle lime juice over the hot cauliflower and mix gently.
- Sprinkle with chopped coriander and serve immediately.
Notes
Adjust chipotle powder to your spice preference.
For extra flavor, try adding lime zest before serving.
Best served fresh out of the oven for optimal taste.
