- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 1/4 cup sugar
- 2/3 cup almond flour
- 1/4 cup cocoa powder
- 1/4 tsp baking soda
- 1 pinch of salt
- 1/3 cup chocolate chips
Instructions
- Preheat your oven to 325°F and grease an 8×8 inch baking dish.
- In a blender, combine cottage cheese, eggs, vanilla, maple syrup, and sugar. Blend until smooth, for 60-90 seconds.
- In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
- Pour the wet mixture into the dry ingredients and fold gently until just combined.
- Fold in the chocolate chips and pour the batter into the prepared baking dish, spreading evenly.
- Bake for 18-22 minutes until the top is set and a toothpick comes out with a few moist crumbs. Let cool for 5 minutes before cutting into squares.
Notes
Using a blender instead of a food processor results in a smoother texture.
Reserve a few chocolate chips to sprinkle on top for an appealing presentation.
Be careful not to overmix the batter to maintain a tender crumb.
