- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1/2 cup almond flour
- 1/3 cup cacao powder
- 1/4 tsp baking soda
- 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)
Instructions
- Preheat your oven to 350°F and line an 8×8-inch baking dish with parchment paper or grease it well.
- Blend the cottage cheese until smooth, achieving a thick yogurt-like consistency. Set aside.
- In a large bowl, whisk together eggs, vanilla extract, coconut sugar, and maple syrup. Mix in the blended cottage cheese until well combined.
- Add almond flour, cacao powder, and baking soda. Stir until the brownie batter is smooth.
- Fold in the chocolate chips, reserving a few for topping.
- Pour the batter into the prepared baking dish, spreading it evenly. Sprinkle remaining chocolate chips on top.
- Bake for about 24–26 minutes, or until a toothpick comes out mostly clean with a few moist crumbs for that fudgy texture.
- Allow the brownies to cool in the pan for 15–20 minutes before slicing.
Notes
For an extra chocolatey taste, use dark chocolate chips.
