- 4 cabbage steaks
- 1/3 cup olive oil
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
- Wash the cabbage and cut it in half vertically.
- Slice 'steaks' from one half, approximately 1 inch thick, cutting through the stem to keep them intact.
- In a bowl, mix olive oil, 1/3 cup of grated Parmesan, minced garlic, salt, pepper, and smoked paprika.
- Brush both sides of the cabbage steaks with the mixture.
- Place piles of the remaining Parmesan on the prepared baking sheet, about 1/3 cup each for each steak.
- Set each cabbage steak on its cheese pile on the baking sheet.
- Roast in the oven for 20-25 minutes, until the cheese is golden and crispy.
- Before serving, drizzle with balsamic vinegar and sprinkle with chopped parsley.
- Serve immediately.
Notes
You can adjust the amount of garlic and spices to your taste.
For extra crispiness, broil the steaks for the last few minutes of cooking.
