Description

These Date Bars are a perfect combination of irresistible flavors and simple prep. Made with wholesome oat flour and sweet dates, they make a delicious snack or dessert for any occasion!


Ingredients

  • 1 ½ cups oat flour
  • 1 cup old-fashioned rolled oats
  • ½ cup coconut sugar
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter or coconut oil, softened
  • 1 package, 8 ounces dates, chopped (about 1 ¼ cups)
  • 1 cup water
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F and line an 8×8 square baking dish with parchment paper.
  2. In a saucepan, combine chopped dates and water. Bring to a boil, then reduce the heat and simmer for around 10 minutes, stirring occasionally until the mixture thickens and the dates soften.
  3. Mix in vanilla and lemon juice into the date mixture once thickened.
  4. While the dates are cooking, prepare the crumble by mixing oat flour, rolled oats, coconut sugar, and baking soda in a medium bowl. Stir well to combine.
  5. Add vanilla extract and softened butter to the oat mixture. Use a fork or your fingers to mix until it forms a crumble that clumps together.
  6. Take 2 cups of the oat mixture and press it firmly into the bottom of the lined baking dish to create a crust.
  7. Spread the cooked date mixture over the crust evenly using a spatula.
  8. Sprinkle the remaining 1 cup of oat mixture over the date layer, pressing down gently with a spatula.
  9. Bake for 35-40 minutes or until the filling is bubbly and the topping is golden brown.
  10. Once baked, allow the bars to cool completely before cutting into 16 squares. Enjoy!

Notes

Make sure to use parchment paper for easy removal of the bars after baking.
These bars can be stored in an airtight container for up to a week.
Feel free to add chopped nuts or seeds to the crumble for added texture.
