Description

These Decadent Cottage Cheese Date Brownies balance rich chocolate flavors with the creaminess of cottage cheese. Easy to prepare, they are perfect for a delightful treat or a healthy dessert option, packed with protein and natural sweetness.


Ingredients

  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips

Instructions

  • Soak the dates in hot water for 10 minutes to soften, then drain.
  • Combine the softened dates, chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt in a food processor or blender. Blend until smooth and thick for the brownie layer.
  • In a large bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth—about 2-3 minutes. Fold in mini chocolate chips gently.
  • Line an 8×8 inch baking dish with parchment paper. Press the date-chocolate mixture evenly on the bottom, then spread the cottage cheese mixture over the top.
  • Place the dish in the freezer for at least 1 hour until firm enough to cut. Remove using parchment paper handles, cut into squares, and serve.

Notes

For best results, use good quality cottage cheese to achieve a thick texture.
If the mixture sticks while pressing, damp hands can help.
Feel free to adjust the sweetness by adding more maple syrup if desired.
