Ingredients
Scale
- 10 dates (soaked in hot water for 10 minutes to soften)
- 1/2 cup almond flour
- 4 tbsp chocolate protein powder
- 2 tbsp cocoa powder
- 2 1/2 tbsp maple syrup
- 1 tsp vanilla
- 1/8 teaspoon salt
- 1 cup cottage cheese
- 1/2 cup vanilla protein powder
- 1 1/4 cups almond flour
- 2 1/2 tbsp maple syrup
- 2 tbsp cashew butter
- 1 1/2 tsp vanilla
- 1/3 cup mini chocolate chips
Instructions
- Soak the dates in hot water for 10 minutes to soften, then drain.
- Combine the softened dates, chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt in a food processor or blender. Blend until smooth and thick for the brownie layer.
- In a large bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth—about 2-3 minutes. Fold in mini chocolate chips gently.
- Line an 8×8 inch baking dish with parchment paper. Press the date-chocolate mixture evenly on the bottom, then spread the cottage cheese mixture over the top.
- Place the dish in the freezer for at least 1 hour until firm enough to cut. Remove using parchment paper handles, cut into squares, and serve.
Notes
For best results, use good quality cottage cheese to achieve a thick texture.
If the mixture sticks while pressing, damp hands can help.
Feel free to adjust the sweetness by adding more maple syrup if desired.
