Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, combine the dry cake mix, melted butter, eggs, and optional extracts, stirring until a thick dough forms.
- Gently fold in rainbow sprinkles without over-mixing. The dough will be sticky.
- Let the dough rest uncovered for about 5 minutes to thicken.
- Use a medium cookie scoop to portion the dough into balls.
- Roll each cookie ball in additional sprinkles, pressing gently to adhere.
- Place the dough balls on the prepared baking sheet, spaced about 3 inches apart. Bake for 10-12 minutes until edges are set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
