Description

This Elegant Graduation Cake with Fondant Cap Topper features a flavorful blend of cakes, buttercream frosting, and whimsical decorations that are sure to impress any graduate. Easy to make, it’s perfect for celebrating a significant achievement with loved ones.


Ingredients

Scale
  • 2 yellow sheet cakes
  • 2 chocolate sheet cakes
  • 1 cotton candy cake
  • 10 cups American buttercream frosting (tinted yellow with gel food coloring)
  • 4 cups marshmallow fondant (2 cups black and 2 cups white)
  • 1 batch rice krispie treats (can also use store-bought)

Instructions

  1. Bake 2 yellow sheet cakes (9×13 dimensions), 2 chocolate sheet cakes (9×13), and 1 cotton candy dome cake (5-inch diameter). Use leftover cotton candy batter for cupcakes if desired.
  2. Cool the cakes completely.
  3. Prepare the yellow buttercream frosting while the cakes are cooling.
  4. For the cap cake, place the dome cake on a cake board of the same size, frost with buttercream, and chill for 20 minutes.
  5. Roll out black fondant and cover the chilled dome cake. Trim the excess with a pizza cutter and insert a bubble tea straw in the center.
  6. Create the cap top using a square cardboard piece, color the edges with a black edible marker, and cover with black fondant. Trim the excess.
  7. Cut a small circle from fondant, brush corn syrup onto the cardboard, and attach a folded ribbon and the small circle on top.
  8. Secure the cap to the dome cake with melted chocolate or royal icing and steam to remove powdered sugar residue.
  9. For the edible diploma, shape rice krispie treats into a log, ice it, and wrap with white fondant, trimming the excess.
  10. Add fondant circles to both ends of the diploma and wrap it with a red ribbon.
  11. Assemble the cake by placing 2 chocolate cakes side by side on a large board, icing them, and stacking the 2 yellow cakes on top.
  12. Pipe roses on the sides and top of the cake using yellow icing and a star tip.
  13. Place the cap and diploma where desired on the cake, reinforcing them with dowels if needed.
  14. Create letter cutouts for 'Congratulations Class of 2024' and adhere them to the cake board with buttercream.
