- 1 yellow onion, chopped
- 1/3 cup crumbled blue cheese
- 1/4 cup panko breadcrumbs

- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Pre-heat the oven to 450 degrees.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add chopped onions and cook for 3-4 minutes, stirring occasionally, until they are translucent.
- Transfer the cooked onions to a mixing bowl and allow to cool for 2-3 minutes.
- Mix in the crumbled blue cheese, panko breadcrumbs, kosher salt, and coarse ground black pepper.
- Gently mash the mixture together with a fork until well combined.
- In the same skillet, melt the remaining 2 tablespoons of unsalted butter over high heat.
- Season the filet mignon steaks with kosher salt and black pepper on all sides.
- Sear the steaks in the skillet for 3 minutes on each side until browned.
- Top the browned steaks with the blue cheese mixture and transfer to the oven to bake for 4-6 minutes depending on desired doneness.
- Allow the steaks to rest for 10 minutes, covered with foil, before serving.
