Instructions
- Preheat the oven to 350° F and prepare muffin pans with 18 liners.
- In a large bowl, cream together the sugar and unsalted butter until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the green food coloring and vanilla extract.
- In a separate bowl, whisk together the flour, salt, baking soda, and baking powder until well combined.
- Mix the buttermilk into the wet ingredients until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fill the prepared liners three-quarters full with the batter.
- Bake in the preheated oven for about 17 minutes, using a toothpick to check for doneness.
Notes
You can adjust the amount of green food coloring to achieve your desired shade.
