Description

This Guinness Beef Stew is a hearty and flavorful dish made in a slow cooker. Featuring tender beef, rich Guinness beer, and fresh vegetables, it’s easy to prepare and perfect for a comforting dinner after a long day.

Ingredients

Scale
  • 2 tbsp olive oil
  • 2.5 lb / 1.25 kg beef chuck, boneless short rib or any other slow cooking beef
  • 3/4 tsp each salt and black pepper
  • 3 garlic cloves, minced
  • 2 onions, chopped (brown, white or yellow)
  • 6 oz / 180g bacon, speck or pancetta, diced
  • 3 tbsp flour (all purpose/plain)
  • 440ml / 14.9 oz guinness beer
  • 4 tbsp tomato paste
  • 3 cups (750 ml) chicken stock/broth (or beef broth)
  • 3 carrots, peeled and cut into 1.25 cm / 1/2″ thick pieces
  • 2 large celery stalks, cut into 2cm / 1″ pieces
  • 2 bay leaves
  • 3 sprigs thyme (or sub with 1 tsp dried thyme leaves)

Instructions

  • Cut the beef into 5cm/2" chunks and pat dry, then sprinkle with salt and pepper.
  • In a heavy-based pot, heat oil over high heat and brown the beef in batches, removing it onto a plate afterward.
  • Lower heat to medium; add more oil if the pot looks dry.
  • Cook garlic and onion for 3 minutes until they soften, then incorporate the bacon.
  • Cook until the bacon is browned; add carrot and celery.
  • Stir in the flour and cook for 1 minute.
  • Add the Guinness, chicken stock, and tomato paste, mixing well to ensure the flour dissolves.
  • Return the beef to the pot, ensuring the liquid covers it; add bay leaves and thyme.
  • Cover and lower heat to a gentle simmer; cook for 2 hours until the beef is tender.
  • Remove the lid and simmer for an additional 30 to 45 minutes until the beef falls apart and the sauce thickens.
  • Skim off any fat from the surface and adjust salt and pepper to taste; remove bay leaves and thyme before serving.

Notes

For a gluten-free version, use gluten-free flour and stock.
Serve with creamy mashed potatoes for a comforting meal.
Leftovers taste even better the next day!
