- 1 cup water
- 2 medium red onions, thinly sliced
- 1 tsp salt
- 1/2 tsp red pepper flakes
- 1 tbsp sugar of choice
- 1 cup white vinegar
Instructions
- In a saucepan, heat the water on the stove and turn off the heat before it starts simmering, then set aside.
- Slice the onions thinly (into rings or half-moons) using a knife or mandoline. Transfer the sliced onions to a large mason jar.
- Add the salt, red pepper flakes (if using), sugar of choice, and white vinegar to the warm water. Stir until the sugar and salt dissolve.
- Pour the prepared mixture into the mason jar over the onions. Press them down gently with a spoon, close the lid, and transfer to the fridge.
- For best flavor, let marinate overnight, but you can try them after just 30 minutes. Enjoy with various dishes.
Notes
For extra flavor, add garlic or herbs to the pickling mix.
