- 10g / 0.3 oz unsalted butter
- 1/2 cup cream, full fat
- 3 tbsp caster sugar (superfine white sugar)

Instructions
- Work at a steady pace to keep the whipped egg whites and cream from becoming too warm.
- Separate the eggs, placing the whites in a large bowl and the yolks in a small bowl while the eggs are cold. Allow the whites to sit while preparing other ingredients.
- Whisk the egg yolks until uniform in color.
- Melt the chocolate and butter in a microwave-proof bowl, breaking the chocolate into pieces. Microwave in 30-second bursts, stirring in between, until smooth. Cool slightly before continuing.
- Beat the cream until stiff peaks form, being cautious not to over-whip.
- Add sugar to the egg whites and beat until firm peaks form.
