Description

These roasted carrots shine with their irresistible flavor and simple prep. Tossed in olive oil and seasoned with garlic powder and spices, they make a quick, healthy side for any meal.


Ingredients

  • 2 pounds carrots (peeled and sliced on a bias into ⅓-inch thick slices)
  • 2 tablespoons oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground paprika
  • ¼ teaspoon ground cumin (optional)
  • ½ teaspoon sea salt
  • ground black pepper (to taste)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and slice the carrots on a bias into ⅓-inch thick pieces.
  3. In a large bowl, toss the sliced carrots with oil, garlic powder, paprika, cumin, sea salt, and black pepper to taste.
  4. Spread the carrots out in a single layer on a baking sheet.
  5. Roast for 15 minutes or until the carrots are tender and slightly caramelized, stirring halfway through.

Notes

For a sweeter flavor, add a drizzle of honey before roasting.
