- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup uncooked long-grain brown rice
- 1½ teaspoons sea salt
- ½ teaspoon black pepper
- 1 ½ lbs boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 3 ½ cups low-sodium chicken broth
- ¾ cup low-fat cottage cheese
- 1 teaspoon tamari
- ½ teaspoon poultry seasoning
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- 4 cups broccoli florets, chopped into medium-sized pieces
- 1 cup shredded cheddar cheese
Instructions
- Add the diced onion, minced garlic, uncooked rice, sea salt, black pepper, and chicken broth to the slow cooker. Mix well.
- Place the chicken breasts into the rice mixture and drizzle with olive oil.
- Cover the slow cooker and cook on HIGH for 3-3.5 hours, or until the rice is tender and the chicken reaches an internal temperature of 165°F.
- Once cooked, remove the chicken from the slow cooker and let it rest for about 5 minutes. Cut it into 1–1½-inch pieces.
- While the chicken is resting, combine all cottage cheese ingredients in a blender and blend until smooth.
- Return the chopped chicken to the slow cooker along with the broccoli florets and the cottage cheese mixture. Mix gently to combine. Top with shredded cheddar cheese and cover.
- Cook for an additional 15–20 minutes until the broccoli is tender and the cheese has melted.
