Description

This Slow Cooker Reuben Dip is packed with flavor and perfect for any gathering. With cream cheese, corned beef, and Swiss cheese, this simple recipe is a crowd-pleaser and ideal for quick dinners or game nights.


Ingredients

Scale
  • 16 oz. cream cheese, softened (two 8-oz. pkgs.)
  • 1 lb deli sliced corned beef or pastrami, roughly chopped
  • 2 cups swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 cup sour cream
  • ¾ cup thousand island dressing
  • rye bread
  • rye chips and crackers
  • French bread
  • veggies

Instructions

  1. In a large bowl, combine all the ingredients and mix until well combined.
  2. Transfer the mixture to a 4 quart or larger slow cooker.
  3. Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.
  4. Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers, or bread.

Notes

Feel free to adjust the spice by adding more or less dressing.
This dip can be kept warm in the slow cooker for serving at parties.
