- 1 ¼ cup all-purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon kosher salt
- ¾ cup (113g) white chocolate (roughly chopped)
- 2 tablespoons lemon juice
- ¼ teaspoon lemon extract
- Pinch kosher salt
- 1 tablespoon lemon zest (for garnish)
Instructions
- Preheat the oven to 350℉. Grease and line an 8×8 inch pan with parchment paper, ensuring it adheres to the bottom and sides.
- In a large bowl, combine sugar and lemon zest, rubbing them together with your fingers to release essential oils.
- Add softened butter, lemon extract, and vanilla extract; beat with a hand mixer on medium speed until fluffy, about 1 minute.
- Incorporate lemon juice and eggs; beat on medium speed until well combined and smooth.
- Add dry ingredients: flour, baking powder, and salt. Mix on low speed until combined. Pour batter into the prepared baking dish.
- Bake for 25 minutes until edges are slightly golden and a toothpick comes out clean. Cool for about 15 minutes.
- In the meantime, prepare the white chocolate lemon glaze by microwaving white chocolate and lemon juice in intervals of 20 seconds until melted. Stir until glossy, then mix in lemon extract and salt.
- Pour the glaze over the cooled lemon brownies and move the pan to evenly coat. Garnish with lemon zest and allow the glaze to set for at least 20 minutes before slicing.
