Ingredients

Scale
  • 1 tablespoon salted butter
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt & pepper to taste
  • 2 ounces smoked salmon
  • chopped chives for garnish

Instructions

  • Melt the butter in a nonstick pan over medium heat.
  • Whisk together the eggs and milk (or cream) in a bowl, seasoning with salt and pepper.
  • Pour the egg mixture into the pan with the melted butter, and gently scramble, stirring occasionally, until soft curds begin to form and eggs are not fully cooked.
  • Add the smoked salmon to the pan and continue to cook, mixing it with the eggs until just set and still moist.
  • Garnish with chives and serve in the pan or transfer to plates.

Notes

Use fresh chives for the best flavor.
For creamier eggs, adjust the amount of milk or cream to your preference.
This dish pairs well with fresh bagels or toast.
