Description

These Spring Brunch Puff Pastry Egg Tarts deliver irresistible flavor and simple preparation with bacon, eggs, and cheddar. Perfect for a delicious homemade meal!


Ingredients

  • 4 slices of original bacon, cut into 1 inch pieces
  • 13 ounces puff pastry dough, thawed completely (not frozen)
  • 4 eggs
  • 1 tablespoon water
  • 1/3 cup whole milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon dijon mustard
  • 1 cup cheddar cheese, grated from the block
  • 1/4 cup green onion for serving, sliced thinly on a bias

Instructions

  1. Preheat the oven to 375°F (190°C). In a skillet over medium-low heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to remove excess grease and set aside.
  2. In a bowl, whisk together one egg and the water to create the egg wash.
  3. Cover a cookie sheet with parchment paper. Unroll the puff pastry and cut it into 8 equal rectangular pieces. Arrange them on the cookie sheet and create a border using a paring knife. Fork prick the inner section to prevent puffing. Brush with egg wash and bake for 10 minutes.
  4. While the pastry is baking, whisk together the remaining 3 eggs, milk, Dijon mustard, salt, and pepper. A measuring cup with a spout works well for pouring into the tarts.
  5. Remove the pastry from the oven and press down the centers with a fork, preserving the puffy edges.
  6. Carefully pour the egg mixture into each tart, ensuring not to overfill. Sprinkle half of the cheddar cheese over each tart. Return to the oven and bake for another 10 minutes.
  7. Take out of the oven, add the crispy bacon pieces and the remaining cheese. Bake for an additional 5 minutes.
  8. Top with green onions and serve optionally with Dijonaisse sauce. Enjoy your delicious flaky egg tarts.

Notes

You can use any type of cheese you prefer for variety.
Serve with a side salad for a complete meal.
These tarts are best enjoyed fresh but can be reheated in the oven.
