These Strawberry Swirl Marshmallows are fluffy, sweet, and burst with strawberry flavor. Made simply with gelatin and fresh strawberry elements, they make a delightful treat for any occasion, appealing to those who love homemade sweetness.

- 1/4 cup powdered sugar
- 2 tablespoons cornstarch
- 2 packets of unflavored gelatin
- 1 cup water divided
- 3/4 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 3 ounces strawberry jello
- 3 teaspoons strawberry extract
- 2 drops red gel food coloring
Instructions
- Bloom the unflavored gelatin in a small bowl with 1/2 cup of water.
- Combine granulated sugar, corn syrup, remaining 1/2 cup water, and salt in a large saucepan. Heat over medium until it reaches 240 degrees F.
- Stir in the strawberry jello until well blended.
- Transfer the bloomed gelatin to a stand mixer bowl, and slowly pour in the hot sugar mixture to dissolve the gelatin.
- Whip the mixture on high for 8 to 10 minutes until it becomes fluffy and stiff.
- Prepare an 8×8 inch square pan by lightly spraying it with nonstick baking spray.
- Mix powdered sugar and cornstarch in a small bowl, reserving half for dusting the marshmallows later.
- Dust the bottom of the greased pan with the powdered sugar and cornstarch mix.
- In the last minute of whipping, add strawberry extract and red gel food coloring; continue beating until combined.
- Pour the marshmallow mixture into the prepared pan.
- For a red swirl effect, add 1 to 2 drops of food coloring on the mixture edges and swirl gently using a skewer.
- Sprinkle the remaining powdered sugar/cornstarch mixture over the marshmallows to coat the top.
- Allow marshmallows to set and firm up for at least 4 hours, preferably overnight.
- After resting, cut marshmallows into 12 pieces with a knife or pizza cutter dusted with powdered sugar/cornstarch as needed to prevent sticking.
- Coat the marshmallows in additional powdered sugar to keep them from being sticky.
Notes
Ensure the gelatin is fully dissolved for the best texture in marshmallows.
Optionally, add more food coloring for a vibrant look after pouring into the pan.
Resting the marshmallows overnight will yield firmer results.
