- 1 tbsp olive oil plus additional for brushing.

Instructions
- Preheat your oven to 450°F (232°C) and prepare a large baking sheet with parchment paper.
- Fill a large pot with about 4 cups of water, add a pinch of salt, and bring it to a boil.
- Carefully add the peeled sweet potatoes to the boiling water and cook for 10 to 12 minutes until they are about two-thirds cooked.
- Remove the sweet potatoes from the pot, allow them to cool slightly, and then grate them into a large bowl.
