- 1 (14 oz.) package plant-based beef-less ground crumbles
- 1 tablespoon extra virgin olive oil
- 2 tbsps taco seasoning (homemade or store-bought)
- ¼ cup organic vegetable stock + 2 tbsps
- 8 corn shells or tortillas, warm slightly
- shredded lettuce
- shredded mexican vegan cheese shreds
- pico de gallo
- salsa verde
- guacamole
- vegan sour cream
Instructions
- Heat olive oil in a medium-sized skillet over medium-high heat.
- Add the plant-based meat crumbles, stirring and breaking them up with a wooden spoon until they resemble ground meat.
- Mix in the taco seasoning and veggie stock until everything is well combined and the crumbles are coated.
- Bring the mixture to a boil, then lower the heat and simmer for 15-20 minutes, adding stock if needed for moisture.
- Once cooked through, remove from heat.
Notes
Feel free to substitute the vegan cheese with your favorite flavor.
For added freshness, top with more pico de gallo or your preferred salad greens.
Ensure the meat remains moist but not overly saucy by adjusting the veggie stock.
