  • 1 cup (198g) granulated sugar
  • 1 cup (213g) brown sugar
  • ¾ cup (149g) vegetable oil
  • 1 cup (255g) applesauce, sweetened or unsweetened
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 ½3 cups diced apples, cut into ¼-inch chunks
  • ½ cup (107g) brown sugar
  • ¼ cup (57g) unsalted butter
  • 2 tbsp milk
  • ⅔ cup (76g) powdered sugar, sifted

Instructions

  1. Preheat the oven to 350°F and grease a 10 to 12 cup bundt pan with butter and flour.
  2. Peel, core, and dice the apples into ¼ inch chunks, using about 2.5-3 cups total.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this aside.
  4. In a large mixing bowl, combine granulated sugar, brown sugar, vegetable oil, applesauce, eggs, and vanilla extract, whisking until smooth.
  5. Gradually mix in half of the dry ingredients until just combined.
  6. Add the remaining dry ingredients and the diced apples, mixing gently until combined.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for 60 minutes, checking the top. If browning too fast, cover loosely with foil. Bake 10-20 more minutes until a toothpick comes out clean.
  9. Let the cake cool in the pan for 15-20 minutes before transferring to a wire rack to cool completely.
