Ingredients
Scale
- 1/2 cup all-purpose flour
- 1/4 cup oats
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup butter, cubed, cold
- 12 oz cream cheese (1 & 1/2 package) full fat, softened
- 3 tablespoon heavy cream
- 1 & 1/2 tablespoon flour
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups peeled, cored, and diced apples (about 2 medium-sized apples)
- 1/2 teaspoon ground cinnamon
- 1 tablespoon granulated sugar
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup butter (1 stick), softened
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch square baking pan with parchment paper, allowing some overhang on two sides for easy removal.
- In a bowl, combine the cubed cold butter, brown sugar, salt, flour, oats, and cinnamon. Mix using your hands or a pastry cutter until it forms small clumps; refrigerate for later use.
- In another bowl, beat the softened cream cheese until creamy. Gradually add heavy cream, flour, and granulated sugar, mixing until well combined. Then, beat in the egg and vanilla extract until smooth.
- Fold in the diced apples, ground cinnamon, tablespoon of sugar, and lemon juice into the cream cheese mixture. Pour this filling into the prepared pan, spreading evenly.
- Sprinkle the reserved crumb mixture over the top of the cream cheese filling evenly.
- Bake for 45-50 minutes, or until golden on top and set in the center. Let it cool completely in the pan before lifting out and slicing into bars.
Notes
Make sure to use cold butter for the streusel topping for the best texture.
