Ingredients

  • ½ cup chopped apple, about 1/2 a large apple
  • 1 teaspoon maple syrup
  • pinch of cinnamon
  • ½ cup old fashioned oats
  • ½¾ cup unsweetened almond milk
  • ¼ cup plain greek yogurt or coconut yogurt
  • 2 teaspoons maple syrup, honey or your favorite sweetener
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon, or apple pie spice
  • Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds

Instructions

  1. In a small microwave-safe bowl, mix chopped apple, maple syrup, and cinnamon. Heat for 30-60 seconds until apples soften, then let cool and reserve 1/4 cup for topping.
  2. In a container with a lid, combine oats, milk, yogurt, maple syrup, vanilla, and cinnamon.
  3. Fold in 1/4 cup of the cinnamon apples into the oat mixture and shake the jar to mix well.
  4. Refrigerate overnight or for at least 30-60 minutes if prepared in the morning.
  5. After chilling, add more yogurt or almond milk if the mixture is too thick. Top with the remaining 1/4 cup apples and your choice of toppings.

Notes

Adjust the sweetness by varying the amount of maple syrup or honey used.
The overnight oats can be stored in the fridge for up to 3 days for an easy breakfast option.
Feel free to get creative with toppings like nut butter or seeds for added texture.
