- 2 lb cod filets
- ½ cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon ground pepper
- 1 teaspoon paprika
- 1 teaspoon dried italian seasonings
- 2 whole eggs
- 1 cup panko breadcrumbs
- 1 teaspoon dried parsley
- 2–3 tablespoons olive oil
- chopped parsley for garnish
- lemon wedges for garnish
Instructions
- Preheat the oven to 400 degrees F.
- Pat dry the cod filets with a kitchen towel and set aside.
- Prepare the breading station by combining flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning in one bowl.
- In a second bowl, whisk together the eggs and a splash of water for about a minute.
- In the third bowl, mix together the panko breadcrumbs and parsley.
- Coat each cod filet first in the flour mixture, then dip in the egg mixture, and finally coat with the breadcrumb mixture until evenly covered.
- Place the coated filets on a baking tray lined with parchment paper and spray the tops with cooking spray.
- Bake in the oven for 12-15 minutes until cooked through.
- Garnish with chopped parsley and serve with lemon wedges and greens.
Notes
Make sure the cod filets are patted dry to help the coating stick better.
Feel free to add your favorite herbs to the breadcrumb mixture for extra flavor.
