- 4 peaches ripe but firm, halved and pitted
- 3 tablespoons unsalted butter cut into small cubes
- 4 tablespoons brown sugar light or dark
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
- 1 tablespoon maple syrup
- Splash of bourbon
Instructions
- Preheat oven to 375°F. Lightly butter a small baking dish just large enough to hold the peaches snugly.
- Place peach halves cut-side up in the baking dish.
- In a small bowl, mix brown sugar, cinnamon, and salt. Sprinkle evenly over the peaches.
- Dot each peach half with butter, then drizzle with vanilla, lemon juice, and bourbon.
- Divide the brown sugar mixture on top of the peaches.
- Bake them for 25 to 30 minutes, or until the peaches are fork-tender and the tops are lightly caramelized.
- Serve warm with a big scoop of vanilla ice cream.
