- 3 large egg yolks, beaten
- 3 cups whole milk

- 2 bananas, sliced, plus more for topping
- 1/2 cup whipped cream or store-bought whipped topping
Instructions
- In a medium saucepan off heat, whisk together sugar, cornstarch, and salt.
- Whisk in beaten egg yolks and milk.
- Place over medium heat and stir consistently until boiling and thickened, about 10 minutes.
- Let it boil while stirring for 1 minute until it coats the back of a spoon.
- Remove from heat and stir in butter and vanilla until smooth.
- Add sliced bananas into the baked pie crust, then pour pudding mixture over bananas.
- Refrigerate the pie for 4 hours to cool.
- Before serving, whip cream and pipe around the edges of the pie, adding more banana slices on top.
Notes
For best flavor, use ripe bananas.
