Description

Ingredients

  • 2.5 lbs chicken thighs boneless skinless
  • 2 tablespoon brown sugar
  • 2 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 3 tbsp avocado oil
  • 1 cup homemade southern bbq sauce

Instructions

  1. In a large bowl, combine chicken thighs with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil. Mix well and marinate for at least 4 hours or overnight.
  2. Take the chicken out of the fridge 30 minutes before grilling.
  3. While the chicken is warming up, preheat the grill to medium-high heat.
  4. Place the chicken thighs on the grill and reduce heat to medium. Cook for a few minutes on each side until charred and grill marks appear.
  5. When the chicken is almost cooked through, baste both sides with BBQ sauce and move them to indirect heat to finish cooking.
  6. Remove the chicken when the internal temperature reaches 175-190°F for dark meat or 165°F for white meat, and serve with additional BBQ sauce.

Notes

For best flavor, marinate the chicken thighs overnight.
You can substitute chicken breasts if desired, but adjust cooking times accordingly.
Serve with sides like coleslaw or grilled vegetables for a complete meal.
