Ingredients

  • 2 cups mixed berries (blueberries, raspberries, blackberries, strawberries, chopped)
  • ¼ cup granulated sugar, plus 1 tbsp for sprinkling
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 sheet store-bought pie dough or homemade, chilled
  • 1 egg for egg wash
  • optional: coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 400°F and prepare a baking sheet by lining it with parchment paper.
  2. In a bowl, combine the mixed berries, ¼ cup granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Toss gently to mix.
  3. Roll out the pie dough on a floured surface to form a circle, about 1/8 inch thick.
  4. Transfer the dough to the prepared baking sheet.
  5. Spoon the berry mixture into the center of the dough, leaving a 2-inch border around the edges.
  6. Fold the edges of the dough over the berries, pleating it as necessary to create a rustic look.
  7. Brush the dough with the egg wash and sprinkle the top with coarse sugar if desired.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the berries are bubbling.
