- ¾ cup fresh blueberries, or frozen
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste, or extract
- 1 graham cracker, crushed
Instructions
- Combine the blueberries, maple syrup, and lemon juice in a small saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes, allowing the blueberries to reduce by half.
- Remove the saucepan from the heat and let the mixture cool for 10 minutes.
- In the meantime, blend the cottage cheese, maple syrup, cornstarch, and vanilla bean paste until smooth and creamy.
- Prepare the popsicle molds by layering the cottage cheese mixture and the blueberry sauce.
- Top the layers with crushed graham cracker for added texture.
- Freeze the molds overnight or for at least 5 hours until solid.
Notes
You can substitute fresh blueberries with frozen ones if desired.
Add more or less maple syrup based on your sweetness preference.
For a creamier texture, use full-fat cottage cheese.
