Description

Blueberry Cheesecake Protein Popsicles offer a delightful blend of flavors with fresh blueberries and creamy cottage cheese, perfect for a refreshing treat that’s also healthy! Enjoy this simple, sweet frozen dessert that will satisfy your cravings while nourishing your body.


Ingredients

  • ¾ cup fresh blueberries, or frozen
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • ¾ cup 4% cottage cheese
  • 3 tablespoons maple syrup
  • ½ teaspoon cornstarch
  • ½ teaspoon vanilla bean paste, or extract
  • 1 graham cracker, crushed

Instructions

  1. Combine the blueberries, maple syrup, and lemon juice in a small saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes, allowing the blueberries to reduce by half.
  2. Remove the saucepan from the heat and let the mixture cool for 10 minutes.
  3. In the meantime, blend the cottage cheese, maple syrup, cornstarch, and vanilla bean paste until smooth and creamy.
  4. Prepare the popsicle molds by layering the cottage cheese mixture and the blueberry sauce.
  5. Top the layers with crushed graham cracker for added texture.
  6. Freeze the molds overnight or for at least 5 hours until solid.

Notes

You can substitute fresh blueberries with frozen ones if desired.
Add more or less maple syrup based on your sweetness preference.
For a creamier texture, use full-fat cottage cheese.
