Description

These Blueberry Crumble Bars are a delightful treat, featuring fresh blueberries and a buttery crumb topping that melts in your mouth. Perfect for gatherings or an afternoon snack!


Ingredients

  • 1 1/2 cups salted butter, softened
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon cornstarch
  • 4 cups fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
  2. In a large bowl, mix together the softened butter, sugar, vanilla extract, and salt until thoroughly combined.
  3. Gradually add in the flour, mixing until the dough comes together.
  4. Press approximately 2/3 of the dough mixture into the bottom of the prepared pan and bake for 15 minutes.
  5. In a separate bowl, mix the remaining sugar and cornstarch. Add the blueberries and stir until evenly coated.
  6. Spread the blueberry mixture over the pre-baked crust in the pan.
  7. Crumble the remaining dough mixture over the blueberries evenly.
  8. Bake for an additional 30-35 minutes, until the top is golden brown and the filling is bubbly.
  9. To make the icing, whisk together the powdered sugar and milk until smooth. Adjust the consistency with more milk if needed.
  10. Drizzle the icing over the cooled bars before serving.

Notes

Ensure the butter is softened for easier blending.
Fresh blueberries work best, but frozen blueberries can be used; just thaw and drain them first.
Allow the bars to cool completely before drizzling with icing for best results.
