Description

These Blueberry Crumble Cheesecake Bars feature a creamy filling and a buttery oat topping. With simple ingredients like blueberries and cream cheese, they’re perfect for gatherings or a sweet treat at home.


Ingredients

  • 3/4 cup butter, softened
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cups flour
  • 1 1/3 cups quick oats
  • 1 (8 oz) cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla
  • 1 egg yolk
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 350 degrees F and prepare a 9×13 pan with non-stick spray.
  2. In a mixing bowl, blend the softened butter, sugar, and brown sugar until smooth. Add baking soda, salt, flour, and quick oats; mix until combined.
  3. Press half of the mixture into the bottom of the prepared pan and bake for 13 minutes.
  4. While the crust is baking, prepare the filling by blending the softened cream cheese and sweetened condensed milk until smooth. Add vanilla and egg yolk, mixing until combined.
  5. Once the crust is baked, remove it from the oven and spread the cream cheese mixture evenly over it.
  6. Sprinkle the blueberries on top of the cream cheese layer.
  7. Top with the remaining oatmeal crumble mixture, pressing it down lightly.
  8. Bake for an additional 20-25 minutes or until the edges are golden brown.
  9. Allow the bars to cool completely before cutting into squares.

Notes

For a fruity twist, swap blueberries with other berries such as raspberries or strawberries.
Make sure the cream cheese is softened for easy mixing, ideally at room temperature.
Allow adequate cooling time for the best texture when cutting.
