- 1 cup unsalted butter room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest
- 1 cup fresh blueberries
Instructions
- Combine the flour, salt, and powdered sugar in a medium bowl. Cut in the butter with a fork or pastry blender until the mixture is crumbly.
- Grease a 9×13 inch baking pan with cooking spray or butter. Firmly press the crust mixture into the prepared pan.
- Bake at 350°F for 18-20 minutes or until light golden brown. Remove from the oven and let cool.
- In a separate bowl, whisk the eggs. Add the sugar and 1/4 cup flour, continuing to whisk. Stir in the lemon juice and optional lemon zest, mixing until well combined. Pour over the crust, then sprinkle the blueberries evenly over the lemon mixture.
- Bake for an additional 20-25 minutes or until the top is just turning golden brown. Remove from the oven and allow to cool slightly on a wire rack.
- Once cooled, refrigerate for at least 2 hours until completely set. Before serving, sprinkle with powdered sugar and cut into bars.
Notes
Add extra lemon zest for a more intense lemon flavor.
Use frozen blueberries if fresh are not available; no need to thaw before using.
Store bars in the refrigerator for best freshness.
