These Blueberry Muffin Bites are deliciously fluffy with a burst of blueberry sweetness. Perfect for breakfast or as a snack, they’re easy to make with simple ingredients!

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup whole milk
- 2 eggs
- 8 tablespoons unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 cup blueberries
Instructions
- Preheat the oven to 400°F and line a mini muffin pan with mini paper liners.
- In a medium bowl, mix the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl or measuring cup, whisk together the milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to over-mix.
- Gently fold in the blueberries with a spatula.
- Fill each muffin liner about two-thirds full with the batter.
- Bake in the preheated oven for 10-12 minutes, or until lightly browned and a toothpick comes out clean when inserted in the center.
- Let cool and serve plain or with a vanilla glaze.
Notes
For added sweetness, drizzle with a vanilla glaze after cooling.
Feel free to use frozen blueberries if fresh ones are unavailable, but do not thaw them before use.
Store leftovers in an airtight container at room temperature for up to 3 days.
