These Blueberry Pie Bars offer a delightful balance of sweet and tart flavors, made with wholesome ingredients like blueberries and oats. Perfect for a quick dessert or a snack, they are easy to bake and simply delicious!

- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, allowing a 1” overhang.
- In a large bowl, mix the flour, oats, brown sugar, baking powder, and salt. Add the melted butter and vanilla, stirring to combine.
- Press ⅔ of the crust mixture into the bottom of the prepared baking dish and set aside.
- In another bowl, combine the blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust in the baking dish, and sprinkle the remaining crust mixture over the top.
- Bake for 55 minutes or until the blueberries are bubbly and the crust is golden. Allow the bars to cool completely before using the parchment to remove them. Slice into 9 bars and serve.
Notes
For a sweeter version, add more sugar to the blueberry filling.
These bars can be stored in an airtight container for up to 3 days.
Serve with whipped cream for an extra touch!
