Description

These Blueberry Pie Bars offer a delightful balance of sweet and tart flavors, made with wholesome ingredients like blueberries and oats. Perfect for a quick dessert or a snack, they are easy to bake and simply delicious!


Ingredients

  • 1 ¼ cup all purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 10 tbsp butter, melted
  • 1 tsp vanilla
  • 3 cups blueberries
  • 2 tbsp lemon juice
  • ⅓ cup sugar
  • 3 tbsp cornstarch
  • ½ tsp vanilla

Instructions

  1. Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, allowing a 1” overhang.
  2. In a large bowl, mix the flour, oats, brown sugar, baking powder, and salt. Add the melted butter and vanilla, stirring to combine.
  3. Press ⅔ of the crust mixture into the bottom of the prepared baking dish and set aside.
  4. In another bowl, combine the blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust in the baking dish, and sprinkle the remaining crust mixture over the top.
  5. Bake for 55 minutes or until the blueberries are bubbly and the crust is golden. Allow the bars to cool completely before using the parchment to remove them. Slice into 9 bars and serve.

Notes

For a sweeter version, add more sugar to the blueberry filling.
These bars can be stored in an airtight container for up to 3 days.
Serve with whipped cream for an extra touch!
