Description

This Breakfast Casserole is a must-try for brunch lovers. With layers of sausage, eggs, and cheese, it’s not only flavorful but also easy to prepare and perfect for serving a crowd.

Ingredients

Scale
  • 1 pound pork sausage
  • 10 large eggs lightly beaten
  • 3 cups milk
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 6 cups cubed bread
  • 2 cups shredded sharp cheddar cheese
  • ½ cup diced red pepper optional
  • sliced green onion optional

Instructions

  1. Grease a 9x13x2-inch casserole dish.
  2. In a large skillet, cook the sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
  3. In a large bowl, whisk together the eggs, milk, and salt until completely combined.
  4. Evenly distribute half the bread in the prepared casserole dish. Sprinkle with half the cheese, black pepper, red pepper, and sausage. Repeat the layers.
  5. Pour the egg mixture evenly over the casserole.
  6. Cover and refrigerate overnight, or bake immediately.
  7. When ready to bake, preheat the oven to 325°F. Bake uncovered for 60-75 minutes, or until the eggs are set. If the top begins to brown too quickly, loosely cover with foil.
  8. If desired, sprinkle with sliced green onions before serving warm.

Notes

Feel free to customize the casserole by adding your favorite vegetables or changing the cheese.
For best results, refrigerate overnight to allow the flavors to meld together before baking.
This dish is great for meal prep and can be made in advance for busy mornings.
