Ingredients

  • 12 oz grape or cherry tomatoes, halved
  • 8 oz mozzarella pearls
  • 2 tablespoons finely chopped basil
  • 1 tablespoon olive oil
  • 1 clove garlic, minced

  • 2 boneless skinless chicken breasts, about 1 ½ lbs

  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 3 large eggs
  • 1 cup panko bread crumbs
  • 3/4 cup freshly grated parmesan cheese
  • 1 tablespoon finely chopped parsley
  • 1/2 cup olive oil, for frying
  • balsamic glaze, for drizzling
  • chopped fresh basil, for sprinkling

Instructions

  1. Make the caprese salad by combining the tomatoes, mozzarella, basil, olive oil, garlic, salt, and pepper in a medium bowl.
  2. Prepare the chicken cutlets by placing the chicken breasts on a cutting board and slicing them horizontally to create four pieces.
  3. Pound the chicken to about 1/4-inch thickness, season with salt and pepper, and set aside.
  4. Mix the flour, garlic powder, salt, and pepper in one bowl. In another bowl, whisk the eggs, and in a third, combine the panko, Parmesan, and parsley.
  5. Dredge each chicken piece in the flour, dip into the eggs, then coat with the panko mixture.
  6. In a hot skillet with olive oil, fry the chicken for 2-3 minutes on each side until cooked through. Place on a paper towel-lined plate to drain.
  7. Assemble by placing the chicken on plates and topping with the caprese salad, serve immediately.

Notes

For an extra kick, add chopped chili flakes to the caprese salad.
Ensure the oil is hot enough before frying to achieve a crispy texture.
Use fresh basil for the best flavor in the salad.
