Ingredients

Scale
  • 1 3/4 cups flour
  • 1/2 cup brown sugar
  • 3/4 cup butter, softened
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3 cups apples, peeled & diced
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup flour
  • 1/2 cup quick oats
  • 2/3 cup brown sugar
  • 1 1/2 tsp cinnamon
  • 1/2 cup butter, melted
  • caramel sauce

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9 x 13-inch pan with non-stick spray and set aside.
  2. In a small bowl, combine 1 3/4 cups flour, 1/2 cup brown sugar, and 3/4 cup softened butter to make the shortbread crust. Mix with a fork until crumbly.
  3. Press the crust mixture into the prepared pan and bake for 20 minutes.
  4. In a medium bowl, beat together the softened cream cheese, 1/2 cup sugar, and 1 tsp vanilla. Add the 2 eggs and mix until well combined. Set aside.
  5. Peel, core, and dice enough apples to equal 3 cups. In a mixing bowl, combine the apples with 2 tbsp brown sugar, 1/2 tsp cinnamon, and 1/4 tsp nutmeg. Set aside.
  6. In another medium bowl, combine 1 cup flour, 1/2 cup quick oats, 2/3 cup brown sugar, 1 1/2 tsp cinnamon, and 1/2 cup melted butter to make the streusel topping. Mix until thick and clumpy using your hands.
  7. Once the crust is done, let it cool for 10 minutes.
  8. Spread the cream cheese layer evenly over the cooled crust. Top with the apple mixture, followed by the streusel layer.
  9. Bake for 30-40 minutes until the cheesecake layer is set.
  10. Allow to cool completely, then refrigerate. Serve chilled, drizzled with caramel sauce.

Notes

For added flavor, consider using a mix of sweet and tart apples.
Ensure the cream cheese is at room temperature for easier mixing.
These bars are best served chilled and can be topped with whipped cream for an extra treat.
