Description

Carmelitas are a delightful treat combining rich chocolate chip cookie dough, gooey caramel, and chocolate chips. They’re easy to prepare and ideal for satisfying your sweet cravings or impressing guests at gatherings!

Ingredients

Scale
  • 30 ounces chocolate chip cookie dough, refrigerated, store-bought or homemade
  • 11 ounces caramels
  • ¼ cup evaporated milk
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Slice a little more than half of the cookie dough into 1/4" rounds and layer them on a parchment-lined 9-inch square baking pan.
  3. Press the cookie dough into a solid, even layer.
  4. Bake for 20 to 25 minutes or until golden brown. Remove from the oven and let cool slightly.
  5. In a microwave-safe container, combine unwrapped caramels with evaporated milk and heat on high for 1 minute. Stir and continue heating in 30-second intervals until melted.
  6. Sprinkle chocolate chips over the cooled cookie crust.
  7. Drizzle the melted caramel over the chocolate chips.
  8. Crumble the remaining cookie dough on top of the caramel.
  9. Return the baking pan to the oven and bake for an additional 12-15 minutes until lightly golden brown.
  10. Allow to cool to room temperature, then refrigerate for at least 2 hours.
  11. Let sit for 15 minutes before cutting and serving.

Notes

For easier caramel melting, cut the caramels into smaller pieces before microwaving.
These bars store well in an airtight container in the fridge for several days.
Feel free to experiment with different types of chocolate chips like dark or white chocolate.
