Description

This Cheddar Pie Dough is a must-try for anyone who loves an extra flaky crust filled with cheddar flavor. Simple preparation using chilled butter and cheese makes it perfect for quick dinners or special occasions.

Ingredients

Scale
  • 325 g all-purpose flour
  • 12 g granulated sugar
  • 1 teaspoon kosher salt, Diamond Crystal preferred
  • 227 g salted butter, cut into tablespoons, chilled
  • 70 g shredded cheddar, large shreds, chilled
  • 2 large egg yolks, chilled
  • 5 Tbsp ice cold water*

Instructions

  1. Chill the butter and flour mixture in the freezer for 10-15 minutes before starting.
  2. In a large bowl, whisk together the flour, sugar, and salt.
  3. Add the cold butter and toss to coat, then cut the butter into the flour mixture using a pastry blender or your fingers until it resembles coarse pebbled sand.
  4. Mix in the shredded cheese, followed by the egg yolks and ice water. Toss together until the mixture resembles a shaggy mess.
  5. Transfer the mixture onto a clean work surface and quickly knead until it forms cohesive dough without being smooth.
  6. Divide the dough into two equal parts, flatten each into a disk, and wrap tightly in plastic wrap. Chill in the refrigerator for at least 30 minutes, ideally overnight.

Notes

Keeping the butter and flour mixture chilled helps create a flakier crust.
Be careful not to over-knead the dough; it should feel dry and crumbly without being smooth.
Chilling the dough overnight enhances the flavors and makes it easier to work with.
