- 3 cups medium shells uncooked
- 3 tablespoons butter
- 1 onion finely diced
- ⅓ cup diced red bell pepper
- 1 teaspoon chili powder
- ½ teaspoon seasoned salt
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1⅓ cups milk
- 3 cups shredded sharp cheddar cheese divided
- ⅓ cup shredded parmesan cheese
- 3 cups cooked chopped chicken
- 4 ounces canned mild green chiles
Instructions
- Preheat the oven to 375°F.
- Cook the medium shells al dente according to package instructions.
- In a skillet, melt the butter over medium heat. Add the diced onion and red bell pepper, cooking until tender (about 5 minutes). Stir in the chili powder and seasoned salt.
- In a large bowl, combine the cream of chicken soup, onion mixture, milk, 2 cups of shredded cheddar cheese, and Parmesan. Mix well, then add the chopped chicken, green chiles, and cooked pasta.
- Spread the mixture into a 9×13 casserole dish and top with the remaining shredded cheddar cheese.
- Bake for 30 to 35 minutes or until the casserole is hot and bubbly.
Notes
For added flavor, consider using rotisserie chicken.
You can substitute other pasta shapes if you prefer.
