Description

This Cheesy Ground Beef Zucchini Skillet is a delightful combination of flavors and textures. Featuring lean ground beef, fresh zucchini, and melted mozzarella, it’s a quick and satisfying dish ideal for a weeknight dinner.


Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon italian seasoning
  • 1 teaspoon beef better than bouillon
  • ½ teaspoon crushed red pepper flakes, optional
  • 1 (14.5 oz) can petite fire roasted tomatoes
  • 34 small zucchini, cut into quarter pieces
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large skillet over medium heat, brown the ground beef with the onion, using a wooden spoon to crumble the meat until it’s no longer pink. Drain excess grease if necessary.
  2. Add garlic, Worcestershire sauce, Italian seasoning, beef bullion, red pepper, and the undrained tomatoes. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  3. Stir in the zucchini and continue to simmer for an additional 10 minutes, or until the zucchini begins to soften.
  4. Top the skillet with shredded mozzarella cheese, reduce the heat to low, and cover with a lid for 3-5 minutes until the cheese melts. Serve immediately.

Notes

You can substitute ground turkey for a leaner option.
Feel free to adjust the amount of red pepper flakes for your desired spiciness.
Serve with crusty bread or a side salad for a complete meal.
