- 1/2 cup cottage cheese, (at room temperature)
- 1/2 cup milk, (at room temperature)
- 2 large eggs, (at room temperature)
- 1/2 cup shredded zucchini
- 1/2 cup shredded carrots
- 2 green onions, (sliced)
- 1 cup cheddar cheese
- 1/2 cup finely chopped cooked bacon
- 1/4 cup freshly grated Parmesan cheese
- Flaky sea salt, (for sprinkling)
Instructions
- Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners or grease it lightly.
- In a medium bowl, whisk the flour, baking powder, salt, garlic powder, and crushed red pepper flakes; set aside.
- In a large bowl, combine the cooled melted butter, cottage cheese, milk, and eggs, mixing until smooth. Stir in the shredded zucchini, carrots, and green onions.
- Gently add the dry ingredients to the wet mixture, stirring until just combined without overmixing. Fold in the cheddar cheese, bacon (if using), and Parmesan cheese.
- Evenly distribute the batter among the muffin cups and sprinkle with flaky sea salt.
- Bake for 18 to 22 minutes until golden and a toothpick comes out clean from the center.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack. Serve warm with butter.
