- 2 tbsp olive oil
- 4 garlic cloves, minced
- 24 oz cherry tomatoes, halved
- 12 oz short pasta, uncooked
- 2 tsp italian seasoning
- 1/2 tsp red pepper flakes
- 1 tsp balsamic vinegar
- 1/2 tsp sea salt
- 1/2 tsp pepper
- 1/3 c grated parmesan
- 2–3 tbsp heavy cream
- 2–3 tbsp tomato paste
- pinch of sugar, optional
- 1/2 – 1 c reserved starchy pasta water
- 1/4 c fresh basil, chopped
Instructions
- Boil a large pot of water and cook the pasta until al dente, reserving some pasta water.
- Heat a large pan over medium-high heat, add olive oil, then garlic, stirring for about 1 minute.
- Stir in halved cherry tomatoes and cook until they burst and break down, adding salt, pepper, seasoning, and balsamic vinegar.
- Reduce heat to medium-low; mix in cream and grated parmesan until melted, followed by the tomato paste and optional sugar.
- Thin out the sauce with reserved starchy pasta water as needed, stirring it in gradually.
- Combine with the pasta and remove from heat, adding chopped basil before serving.
Notes
Feel free to use any type of short pasta you like.
Adjust the spice level by changing the amount of red pepper flakes.
